Sweet Apple Bread

1 1/2 c. whole wheat flour
1 tsp ground cinnamon
1/2 tsp baking soda
1/4 tsp baking powder
1/4 tsp salt
1/4 tsp ground nutmeg
1 c. sugar
2 good sized peeled and shredded apples
1/4 c. canola oil
1/4 tsp lemon peel or a splash of lemon juice
1/2 cup chopped walnuts

1. Grease an 8x4x2 bread pan, muffin pan or 3 small loaf pans. Preheat oven at 350.
2. In med. bowl combine flour, cinnamon, baking soda, powder, salt and nutmeg. Set aside.

3. In another bowl combine sugar, shredded apples, oil, and lemon. Mix well. Add the dry mix to the apple mix. Stir just until moistened. Fold in walnuts.

4. Spoon batter into your greased bread pan and bake at 350 for 55-60 minutes. Will make 12 muffins or 3 small loaves - adjust baking time as needed. Let cool for about 10 minutes before removing from the pan(s).
