Cornmeal Bread

Yield: 2 loaves

Step 1: boil 1 cup water, add ½ cup cornmeal and 1 tsp. salt and cook until thick.
Put in a large bowl to cool.
Step 2: Proof 4 ½ tsp yeast with 1 Tbls. Sugar, ½ c. warm water.
Then add to cooled cornmeal and mix well.
Step 3: Add 1 cup warm milk, 2-3 tsp salt, ¼ cup dark brown sugar,
and 4 ½ cups flour, one cup at a time – mixing well after each addition.
Knead for 15 minutes
Step 4: let rise in a warm draft free place (the oven works well) until doubled in size
Step 5: Punch down and shape into two loaves.
Put into two loaf pans and let them rise until just over rim of pan.
Bake in a preheated 425 oven for 10 minutes
Lower temperature to 350 and bake another 15 – 20 minutes until done.
