Zucchini Bread

½ cup apple sauce
1 cup oil
1 ¾ cups sugar
2 teaspoons vanilla
2 cups coarsely grated zucchini
1 small coarsely grated Granny Smith Apple
1 can (8 oz.) crushed pineapple (a grated carrot is very good added also)
1 cup chopped nuts (walnuts or pecans)
1 cup raisins or any other dried fruit you like 

Stir together in a large bowl until well mixed.
 In a seperate bowl combine the following dry items:
3 cups all purpose flour
2 teaspoons baking soda
1 teaspoon salt
½ teaspoon baking powder
2 teaspoons cinnamon
¾ teaspoon nutmeg
Combine the dry ingredients into the wet, add a third at a time.  Gently stir by hand each addition.
Divide the batter equally between 2 greased and flour-dusted loaf pans.  Bake for 1 hour or until a wooden toothpick inserted in the center comes out clean.  Cool in pans for 10 minutes.  Turn out onto wire racks to cool thoroughly.
