Tofu Croquettes with Cashew Gravy

Tofu Croquettes with Cashew Gravy
½ c minced onion                                 
1 T chicken seasoning
1 T olive oil                                          
1 T nutritional yeast flakes
1 block more nu tofu (firm or extra firm)           
½ tsp sage
½ c bread crumbs                                
½ tsp salt
½ c pecan meal (grind pecans in a food processor or blender)
Sauté the onions in oil until soft and place in a mixing bowl. Add the tofu and mash together until fine. Add the rest of the ingredients and mix well. Refrigerate for 1 hour.
Use a melon scoop to form the mixture into croquettes.
Place in oiled baking dish and bake for 30 minutes @ 350 degrees.
Cover with your cashew gravy (below) or your favorite gravy.
Cashew Gravy
2 ½ c hot water                                   
2 T Braggs Liquid amino or lite soy sauce
½ c raw cashews, rinsed                       
1 T nutritional yeast flakes
¼ c soymilk powder, plain            
2 tsp chicken seasoning
2 T cornstarch                                     
2 tsp Onion powder
In a blender, combine half the hot water with the cashews and process until very smooth. Add remaining hot water and all remaining ingredients and continue blending until thoroughly mixed. Pour out into a sauce pan and bring to a boil, stirring until thickened.
