Melted Cheese (vegan)

2 cups water
1/2 cup raw cashews
4 oz jar pimento
3 Tablespoons nutritional yeast flakes
2 Tablespoon corn starch
1 Tablespoon fresh lemon juice
1 1/2 tsp. salt
1/2 tsp. onion powder
1/4 tsp. garlic powder
Process cashews with 1/2 c. water till smooth add remaining water and other ingredients till smooth, simmer in sauce pan stir constantly till thickened 5-6 minutes. Delicious as topping for vegetables or dip for chips (may add jalapenos or tobasco sauce to taste).
