"Chicken" Noodle Soup

1/2 pound noodles
1 Cup chopped celery
1 onion, chopped
1/4 cup water
2 tablespoons All Purpose Seasoning (recipe in Misc.)
1-1/2 quarts water
2 large potatoes, peeled and cubed, and/or 2 large carrots, sliced
2 Cups garbanzos, with broth
2 Cups Scrambled Tofu (optional)
1 Tbsp chopped parsley
Food yeast flakes to taste (optional)

Cook noodles as directed on package.  Drain.  Meanwhile, simmer next 4 ingredients until celery and onion are tender.  Add 5 cups of the water and the potatoes and simmer.  Process garbanzos, broth, and remaining water in a blender until smooth.  Add to vegetables and simmer slowly to allow flavors to blend.  Adjust water and salt, as desired.  Serves 10.
