"Beef" Stew

1 T canola oil
1 onion, diced
2 stocks celery, diced
1 large carrot, peeled and sliced or chopped
2 - 3 medium potatoes - chopped
2 heaping tablespoons flour
4 cups mock beef broth
1 -2 cups chopped gluten steak (see recipe in entrees) or your favorite beef substitute.

Sauté onions and celery in a pot on medium heat for approximately 10 minutes, until onions are slightly caramelized 
Add carrots, potatoes, and beef substitute and sauté for 5 more minutes
Dust with flour, mix well and sauté for another couple of minutes
Add the mock beef broth, mix, and bring to a boil uncovered over high heat
Once boil is reached, reduce heat to minimum, cover and let cook, stirring occasionally until the vegetables are tender.
A wonderful dish for a cold winter day.
