By Sande' Baked Oatmeal with Fruit
4 - cups Soy or Almond Milk
3 - cups Oatmeal
1 - teaspoon Salt
1/2 - cup Coconut (unsweetened)
3/4 - cup chopped Dates or Raisins
1/8 - cup oil (optional)
1 - teaspoon Vanilla
Preheat over to 375 degrees
Mix and place in baking pans. Keep the mixture to no more than 1-1/2 - 2" thick.
Bake 30-45 minutes. It should be crunchy on top, but chewy on the inside.
For toppings you can use sliced bananas; fruit; fruit sauce or drizzle with maple syrup over top before serving.
